This past week, I had the honor of cooking for some of the best interior designers from around the nation at Design Hound, hosted at LG headquarters. The central kitchen suite was filled with lots of laughter and a sense of curiosity when it comes to cooking. One dish that stood out and became a crowd favorite was the gazpacho.

Gazpacho is usually known as a watery tomato soup and is often enjoyed as a cold soup, typically in the summertime. However, I'm here to tell you that gazpacho is a dish you can enjoy all year round. Today, I'm excited to share all the secrets with you to make your gazpacho at home just as good.

First and foremost, have fun! Cooking should be enjoyable, so make sure you're having a good time while preparing your gazpacho. Gazpacho is essentially a chilled soup that allows you to mix different ingredients and blend them up. What makes this dish special is the addition of bread.

Yes, bread! I know it's not gluten-free, but the bread actually serves as a great thickener, adding a nice texture and depth to your gazpacho. To prepare, marinate your ingridents overnight. If you don't have a sous vide machine, you can easily improvise by placing a pot of water on the stove with a bowl on top and gently heating your ingredients to infuse the flavors if you cant wait overnight!

I love adding fresh basil to my gazpacho bread, but you can use any bread you prefer. Sourdough adds a nice tang thanks to its fermentation process and is also a healthier option. Deep fry your bread in olive oil for caramelization and intense flavor.

The beauty of gazpacho is that you can use different ingredients for each season. In the summertime, you can use strawberries, while in the spring, peas make a great addition. For the base, we used tomato, cucumber, red pepper, a touch of strawberries, vinegar, salt, pepper, and olive oil. Blend everything together, adding a touch of water to get the blender going.

Before serving, taste your gazpacho and adjust the seasoning to your liking. Gazpacho is a versatile dish that can be paired with various foods. For our event, we paired it with scallops, and the salty, briny scallops worked perfectly with the cold, chilled soup.

SIMPLE & Perfect Gazpacho

Ingredients:

- 1 red pepper, chopped

- 2 tomatoes, chopped

- 5 strawberries, chopped

- 2 cup cubed sourdough bread

- 4 tablespoons olive oil

- 4-5 fresh basil leaves

- 1 tablespoon red wine vinegar

- 1 tablespoon tomato paste

- 1 teaspoon honey

- Salt and pepper to taste

- Water, as needed

Instructions:

1. Fry the Bread: In a pan, heat 2 tablespoons of olive oil. Add the cubed bread and fry until golden brown. Set aside.

 

2. Blend the Ingredients: In a blender, combine marianted ingridents from overnight , the red pepper, tomatoes, strawberries, basil leaves, red wine vinegar, tomato paste, honey, salt, pepper, and 2 tablespoons of olive oil. Blend until smooth.

 

3. Adjust the Consistency: Add water as needed & drizzle in olive oit to reach the desired thickness. Blend again.

4. Top with your favorite Garnishs

 

5. Season to Taste: Taste the gazpacho and add more salt, pepper, vinegar, or honey if needed.

 

6. Serve: Pour the gazpacho into bowls. Top with garnish. Drizzle with olive oil and garnish with basil leaves.

 

7. Enjoy: Serve the gazpacho immediately and enjoy its refreshing flavors!
