Miso Carbonara with Ramen Noodles for Two

Ingredients:

 2 packs of Ramen noodles (discard the seasoning packets)

 2 large eggs

 1/2 cup grated Parmesan or Pecorino Romano cheese

 1 tablespoon white or yellow miso paste

 1/4 cup leftover salami, thinly sliced

 1 tablespoon olive oil

 1 teaspoon freshly cracked black pepper (or to taste)

 Salt, to taste

 Optional: Chopped parsley or green onions for garnish

Instructions:

1. Prepare the Ramen Noodles:

 Bring a pot of water to a boil. Cook the Ramen noodles according to the package instructions, usually about 3 minutes. Drain and set aside, reserving 1/2 cup of the cooking water.

2. Cook the Salami:

 In a large pan, heat the olive oil over medium heat. Add the sliced salami and cook until it starts to crisp up, about 2-3 minutes. Remove from heat and set aside.

3. Mix the Egg and Cheese:

 In a bowl, whisk together the eggs, grated cheese, and miso paste until smooth. The mixture should be well combined with no lumps.

4. Combine Everything:

 Return the pan with the salami to low heat. Add the drained Ramen noodles and toss to coat in the salami oil. Add the reserved noodle cooking water, a tablespoon at a time, to create a little sauce.

5. Add the Egg Mixture:

 Remove the pan from the heat and quickly pour in the egg and cheese mixture. Stir continuously to avoid scrambling the eggs. The residual heat from the noodles will cook the eggs gently, creating a creamy sauce that coats the noodles.

6. Season and Serve:

 Add the cracked black pepper and a pinch of salt to taste. Toss everything together until well coated.
