Oxtail Pizza [ FULL RECIPE]
No Need To Go To Cuts And Slices Anymore!
OXTAIL PIZZA WITH HEXCLAD PIZZA STEEL
Everyone knows about the most famous oxtail pizza place, Cuts and Slices, in Brooklyn, New York. However, with the current economy and inflation, oxtails can be quite expensive. Instead of going out to buy a slice, why not make it at home? Not only can it taste better, but it’s also a fun activity for everyone and can actually cost you less.
Interestingly, oxtails used to be thrown away, but like lobster, they’ve become an expensive and popular item, especially in Caribbean cuisine with Jamaican flavors.
I just finished a wonderful dinner event where we completely sold out, thanks to everyone who came! Our menu featured A5 Wagyu from Japan and braised oxtail.
Here is the full recipe for my favorite oxtail pizza using Hexclad pans and a recently purchased pizza oven that cooks pizza in about 90 seconds, holds heat up to 900°F, and cleans easily.

Seasoning the Crust!!!
Everyone loves the pizza filling, but the crust can be the best part if you make it right. Here’s how to season it for maximum flavor:
- Olive oil from Napa Valley
- Osmo roasted garlic salt
- Parmesan cheese
- Lemon zest
- Oregano
- Dried herbs
Make sure your crust has flavor because it’s often left until the end, but it can be the most delicious part.

FULL RECIPE BELOW
Pizza Dough Recipe (16-inch Pie)
Ingredients:
- 2 1/2 cups all-purpose flour
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1 cup warm water (110°F)
- 2 tablespoons olive oil
Instructions:
1. In a large bowl, combine the warm water and sugar. Sprinkle the yeast on top and let it sit for about 5 minutes until it becomes foamy.
2. Add the olive oil, flour, and salt to the yeast mixture. Stir until a dough forms.
3. Turn the dough out onto a lightly floured surface and knead for about 5-7 minutes, until smooth and elastic.
4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
5. Punch down the dough and roll it out to a 16-inch circle on a floured surface.
Seasoning for the Crust
Ingredients:
- 2 tablespoons olive oil (Napa Valley if available)
- 1 teaspoon Osmo roasted garlic salt
- 1 tablespoon grated Parmesan cheese
- 1 teaspoon lemon zest
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
Instructions:
1. In a small bowl, mix together the olive oil, roasted garlic salt, Parmesan cheese, lemon zest, oregano, and thyme.
2. Brush the mixture over the edges of the pizza crust before adding the toppings.
#### Braised Oxtail
Ingredients:
- 2 lbs oxtail
- Salt and pepper
- 1 tablespoon olive oil or avocado oil
- 2 tablespoons Old Bay seasoning
- 1 tablespoon ginger powder
- 1 tablespoon garlic powder
- 1 tablespoon pimento powder
- 2 tablespoons tomato paste
- 1 cup red wine
- 2 tablespoons soy sauce
- 1 leek, sliced
- 1 Scotch bonnet pepper
- 1 tablespoon sumac
- 2 tablespoons brown sugar
- 1 beef bouillon cube
- 1 teaspoon paprika
- 4 cups beef broth or water
Instructions:
1. Preheat the oven to 450°F. Season the oxtails with salt and pepper.
2. Place the oxtails on a baking sheet and roast in the oven for about 20 minutes until browned.
3. In a large pot, heat the olive oil or avocado oil over medium heat. Add the Old Bay, ginger powder, garlic powder, pimento powder, and sumac. Toast the spices for about 2-3 minutes.
4. Add the roasted oxtails to the pot, ensuring they are well-coated with the spices.
5. Pour in the red wine to deglaze the pot, scraping up any browned bits from the bottom.
6. Stir in the tomato paste, leeks, Scotch bonnet, brown sugar, beef bouillon cube, and paprika.
7. Add the beef broth or water to cover the oxtails. Bring to a boil, then reduce to a simmer.
8. Cover and cook for about 3 hours or until the oxtails are tender.
9. Remove the oxtails from the pot and shred the meat off the bones. Set aside.
#### Assembling the Oxtail Pizza
Ingredients:
- Prepared pizza dough (from recipe above)
- Seasoned crust mixture (from recipe above)
- Braised oxtail (from recipe above)
- 1 cup grated Parmesan Reggiano cheese
- 1 clove fresh garlic, grated
- Crème fraîche or sour cream
- Freshly ground black pepper
- Lemon zest
- Roasted garlic salt
Instructions:
1. Preheat your pizza oven to 900°F, or your regular oven to the highest temperature possible (usually around 500°F).
2. Stretch the pizza dough out to a 16-inch circle and place it on a pizza peel or baking sheet.
3. Brush the edges of the dough with the seasoned crust mixture.
4. Sprinkle a layer of grated Parmesan Reggiano cheese over the dough to prevent the bottom from becoming too wet.
5. Spread the shredded braised oxtail evenly over the cheese.
6. Add another layer of grated Parmesan Reggiano cheese on top.
7. Grate fresh garlic over the entire pizza.
8. Transfer the pizza to the oven and cook for about 90 seconds in a pizza oven, or 7-10 minutes in a regular oven, until the crust is golden and the cheese is melted and bubbly.
9. Remove the pizza from the oven and dollop with crème fraîche or sour cream.
10. Finish with freshly ground black pepper, lemon zest, and a sprinkle of roasted garlic salt.
