Oxtail Biria Quesadilla

This week, I'm sharing something extra special – a recipe that takes one of my all-time favorite dishes and gives it a little twist. Growing up, oxtail was a staple in my kitchen. It's rich, flavorful, and packed with nutrients like collagen, which is great for your joints, and a ton of protein too. If you've ever had oxtail in Jamaican or Caribbean cuisine, you know what I’m talking about.

Now, I usually love oxtail in the classic way – served with rice, beans, and that delicious sauce that’s been cooking low and slow for hours. But this week, I’m turning that classic into something new: Oxtail Quesadilla Burritos. They’re cheesy, loaded with flavor, and perfect for dipping into a rich burrito sauce made from the oxtail braising liquid. Trust me, this is a game-changer!

Oxtail Quesadilla

Ingredients:

- 2 lbs oxtail, cleaned and trimmed

- 2 cups beef broth

- 1 large onion, chopped

- 3 cloves garlic, minced

- 1 scotch bonnet pepper (optional, for heat)

- 1 tbsp soy sauce

- 1 tbsp all-purpose seasoning (Jamaican or Caribbean blend)

- 2 tbsp tomato paste

-1 Apple

- 1 can beans of your choice, drained and rinsed

- 4 large flour tortillas

- 2 cups shredded cheddar cheese (or cheese of your choice)

- 2 tbsp vegetable oil

For the Sauce:

- Reserved braising liquid from the oxtail

- 1 tbsp tomato paste

- 1 tbsp soy sauce

- Salt and pepper to taste

Instructions:

1. Prepare the Oxtail:

   - Season the oxtail with soy sauce and all-purpose seasoning.

   - In a large pot, heat some oil over medium heat and brown the oxtails on all sides. Remove and set aside.

   - In the same pot, add onions, garlic, and scotch bonnet if using. Sauté until soft, then stir in tomato paste.

   - Return the oxtail to the pot, add beef broth, and bring to a simmer. Cover and let the oxtail braise for 3-4 hours until tender.

   - Once cooked, remove the oxtails and shred the meat, reserving the braising liquid for the sauce.

2. Make the Sauce:

   - In a small saucepan, add 1-2 cups of the reserved braising liquid.

   - Stir in the tomato paste and soy sauce, and simmer until the sauce thickens slightly. Season with salt and pepper to taste.

3. Assemble the Burritos:

   - Lay out a tortilla and layer it with shredded oxtail, and shredded cheese.

   - Fold in the sides of the tortilla

4. **Grill the Quesadilla

   - Heat a skillet over medium heat with a little oil. Grill each burrito until the tortilla is golden and crispy, and the cheese inside is melted.

5. Serve:

   - Slice the burritos in half and serve them with the oxtail dipping sauce on the side. Enjoy the rich, cheesy goodness with every dip!
