GreatGrandmother’s Cake for Two

 150g raisins

 5g baking soda

 375g cake flour

 5g vanilla extract

 1 vanilla pod

 250g organic pure cane unprocessed sugar

 4 eggs

 175g mayo

1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

2. In a small bowl, combine the raisins with enough hot water to cover them. Let them soak for 15 minutes, then drain and set aside.

3. In a medium bowl, sift together the flour and baking soda. Set aside.

4. In a large bowl, beat the eggs and sugar until light and fluffy.

5. Mix in the vanilla extract and the seeds scraped from the vanilla pod.

6. Gradually add the flour mixture to the egg mixture, alternating with the mayo, and mix until smooth.

7. Fold in the drained raisins.

8. Divide the batter evenly between the prepared cake pans.

9. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

10. Allow the cakes to cool in the pans for 10 minutes, then remove from the pans and cool completely on a wire rack.
